This Homemade Fish Fingers recipe is the best way to make fish sticks at home. The strips are made using breaded cod, haddock, or tilapia and served golden brown with tartar sauce. You can bake or air fry this dish.

What Type of Fish to Use

I love to use cod. It’s so easy to find.

The best fish to use is a white, flaky fish that is mild in flavor and firm in texture. Here are some options:

  • Cod: This is a classic choice for fish sticks, as it has a mild, slightly sweet flavor and a firm, flaky texture that holds up well when breaded.
  • Haddock: Also has a mild and slightly sweet flavor that is similar to cod.
  • Pollock: Mild-flavored fish has a slightly softer texture than cod or haddock, but it is still firm enough to hold up well when cooked.
  • Tilapia: While not traditionally used for fish sticks, it’s a mild, flaky fish that can be a good choice for those who prefer a less fishy flavor.

Key Ingredients for Breading

  • All-purpose flour: This is used to coat the fish sticks and help the egg mixture adhere to them.
  • Eggs: These are beaten and used to coat once the flour has been applied. They help the breadcrumbs stick to the fish and create a crispy outer layer.
  • Breadcrumbs: These are used as the final coating. You can use standard or panko breadcrumbs.

Spices and Seasoning

I like to use lemon pepper, smoked paprika, and salt. You can also add grated parmesan cheese to the breadcrumbs if you’re looking for that flavor profile.

You can also use any of the following:

  • Garlic Powder
  • Onion Powder
  • Thyme
  • Oregano
  • Cajun Seasoning
  • Creole Seasoning

Breading Process

  1. First, dip each fish stick in the flour, shaking off any excess.
  2. Then, dip the fish stick in the beaten egg mixture, letting any excess drip off.
  3. Finally, coat the fish stick in the breadcrumbs, pressing gently to ensure the breadcrumbs adhere well.
  4. Repeat the process with the remaining fish sticks until they are all coated.

How to Make Homemade Fish Fingers

  1. Pat the fish dry. Slice the cod into strips, whatever size you wish. Try to make them even in size so they cook at an even and consistent temperature.
  2. Add the flour, breadcrumbs, and eggs to separate bowls large enough to dredge the fish sticks. Add the lemon pepper, paprika, and salt to the bowl with the flour and stir.
  3. Set up a cooking station with the beaten egg, flour, and breadcrumbs in 3 separate bowls.
  4. Dip the fish in the flour, then the egg, and then the breadcrumbs.
  5. Bake or air fry.

How to Reheat

If you want crispy fish use the oven or air fryer and reheat at 350 degrees until crisp and warm. I would avoid the microwave.

Freezer Tips

Place leftovers in a tightly sealed container or bag in the freezer and store them for up to 2-3 months. Defrost in the fridge overnight.

Ingredients
  

  • 1 1/2 – 2 pounds skinless cod fillets
  • 1/2 cup all-purpose flour
  • 2 eggs beaten
  • 1 1/2 cups breadcrumbs I used panko; See notes.
  • 1/2 teaspoon paprika
  • 1 teaspoon lemon-pepper seasoning
  • salt to taste
  • cooking oil I used olive oil.

Instructions
 

  • Pat the fish dry. Slice the cod into strips, whatever size you wish. Try to make them even in size so they cook at an even and consistent temperature.
  • Add the flour, breadcrumbs, and eggs to separate bowls large enough to dredge the fish sticks. Add the lemon pepper, paprika, and salt to the bowl with the flour and stir.
  • Set up a cooking station with the beaten egg, flour, and breadcrumbs in 3 separate bowls.
  • Dip the fish in the flour, then the egg, and then the breadcrumbs. Keep a moist towel nearby for your hands. Breading can get really messy.

Air Fryer Instructions

  • Spray the air fryer basket with cooking oil.
  • Place the fish sticks in the air fryer basket. Spray with cooking oil. Do not stack the fish. Cook in batches if necessary.
  • Cook for 5 minutes on 400 degrees.
  • Open the basket and flip the fish. Spray with cooking oil. Cook for an additional 5-7 minutes or until crisp and golden brown.

Baked Oven Instructions

  • Preheat oven to 425 degrees.
  • Line a baking sheet with parchment paper. Add the breaded fish sticks. Spray with cooking oil. 
  • Bake for 16-20 minutes (flip halfway through) or until crisp and golden brown.

Notes

Any breadcrumbs will work for this recipe. Panko will give them a little more crunch.
The amount of breadcrumbs, eggs, and flour you will need will vary based on the size of your fish. I like to start with 1/2 cup of flour, 1 egg, and 1 cup of breadcrumbs. You can always add additional servings as you need them. That way you can avoid excess.
Every air fryer and oven will cook at varying speeds. Monitor your fish. Ensure the texture meets your liking and cook it for however long it takes to achieve that.

My children discovered fish fingers at school and love them so I was so happy to see that Brandi had a recipe for them!! So simple to follow, full of flavor, my 10 year old had thirds and kept talking about how good the breading was. I hadn’t had these in decades and they were so good! I made the adult fish sticks for dinner tonight and they were delicious. I added salt, pepper, garlic powder, grated cheese, and paprika to the panko bread crumbs. Finished off with a drizzle of lemon juice. Served with a side of Brussel sprouts for a well balanced meal!! I will definitely be making these again!!
