This Smoked Salmon Eggs Benedict recipe is made with creamy Hollandaise, tender fish, and poached eggs. Add this delicious lox sandwich to your breakfast or Sunday brunch spread.

What is Eggs Benedict

It’s a classic American breakfast dish made with English muffins, poached eggs, hollandaise sauce, and typically with Canadian bacon or ham. The dish is served as a brunch or breakfast item and is popular in many restaurants. When a benny is on the menu, I always order it.

This version substitutes pork for salmon.

What Type of Salmon to Use

Any salmon will work in this recipe. If you don’t want to smoke your own you can find it pre-packaged at some grocers. Costco and Trader Joe’s offer smoked salmon. You can also check out these recipes: Traeger Smoked Salmon and Maple Glazed Salmon.

Hollandaise sauce

Hollandaise sauce is the star of the dish. It’s rich and buttery made from egg yolks, lemon juice, and butter. It’s frequently found in French cuisine and served with seafood and vegetables. The sauce is made by whisking together egg yolks, lemon juice, and water until the mixture thickens.

Butter is added slowly, while continuing to whisk, until the sauce is thick and smooth. It can take some practice to get right. You can also purchase store-bought Hollandaise and pre-package mixes if you wish.

How to Poach Eggs

Poaching eggs takes practice. If you’ve never done it you may fail at your first attempts! Years ago, I certainly did.

Here’s how to do it on the stove:

  1. Add 1 inch of water to a saucepan and bring to a boil.
  2. Crack the egg into a small bowl.
  3. Add one tablespoon of vinegar (clear, regular works best) to the pan.
  4. Pour the egg from the bowl in to the water. You don’t want to crack the egg into the water. Turn the heat off the pan and cover the pan.
  5. Cook for 5-7 minutes and remove with a slotted spoon.

Smoked Salmon Eggs Benedict

  1. Toast the English muffins.
  2. Load up the Benedict with the smoked salmon, poached egg, Hollandaise sauce, green onions, salt, and pepper to taste.

Ingredients
  

  • 1 English Muffin
  • 4 slices smoked salmon
  • 2 poached eggs
  • salt and pepper to taste
  • 2 teaspoons chopped green onions

Homemade Hollandaise Sauce (Feel free to use store-bought if desired)

  • 2 egg yolks
  • 2 tablespoons warm water
  • 2 teaspoons fresh lemon juice
  • 1/2 cup unsalted butter
  • salt and pepper to taste

Instructions
 

Homemade Hollandaise Sauce

  • Separate the egg yolks from the egg whites.
  • Add the egg yolks to a saucepan on medium heat with warm water and lemon juice. Whisk well until combined.
  • Cut the butter into 4 chunks and add it to the pan. Whisk for 3-4 minutes until the sauce thickens. Adjust your heat to low to prevent the eggs from scrambling.
  • Seaon with salt and pepper to taste.

Benedict

  • Toast the English muffins.
  • Load up the Benedict with the smoked salmon, poached egg, Hollandaise Sauce, green onions, salt, and pepper to taste. I also like to add Everything But the Bagel Seasoning.
