What Type of Lobster to Use
I use a combination of lobster meat from the tail along with claw meat. I get the claw meat here from Butcher Box. You can also use the meat from lobster tails if you wish.
The best lobster meat to buy is fresh, wild-caught lobster. This type is caught in the ocean and is considered to be of higher quality than farm-raised lobster. Fresh lobster meat should have a sweet and briny flavor and a firm texture. It can be purchased as whole lobsters, tails, or claws.

What Type of Bread to Use
I find this super important! Any bread will work just fine for a grilled cheese sandwich. If you are looking to elevate the experience I recommend sliced brioche bread or Texas toast. Sourdough and French bread will also work well.
- White bread: Soft, fluffy bread that is easy to bite into and provides a neutral flavor that complements the cheese.
- Sourdough bread: Slightly tangy bread with a crunchy crust and soft interior that adds flavor.
- Rye bread: Dense, dark bread with a slightly bitter flavor that can add depth.
- Texas Toast: Thick, soft bread that provides a sturdy base for the cheese and can help prevent the sandwich from falling apart.
The best bread for grilled cheese is one that holds the cheese and filling together, has a texture that complements the cheese, and has a flavor that you enjoy.
What Type of Cheese to Use
I use sharp cheddar and mozzarella. Any of your favorite cheeses will work for this recipe. If you are looking for a great cheese pull, definitely include mozzarella.
I also recommend blocks of cheese that you grate yourself, as opposed to pre-sliced singles or bagged pre-shredded cheese. There’s a huge difference in the quality of the cheese when you grate it yourself. Pre-shredded and sliced has added preservatives and potatoes starch.
It doesn’t melt the same. As always do what works best for you!
How to Make Lobster Grilled Cheese
Full detailed instructions are below in the recipe card.
- Heat a skillet on medium heat along with butter.
- Add lobster meat, Old Bay Seasoning, salt, and pepper to taste.
- Stir and cook for 3-4 minutes. Remove the lobster and set it aside.
- Spread butter onto one side of two separate slices of bread and place the bread slices butter side down in the skillet.
- Load the cooked lobster and shredded cheese onto both slices of bread. Top the bread with another slice of bread to create a sandwich.
- When the bottom of the bread has browned, flip the sandwiches and cook for a few minutes on the other side.

Ingredients
- 8 oz raw lobster meat Claw, knuckle, or tail.
- 2 teaspoons butter Divided.
- 1/2 teaspoon Old Bay Seasoning
- salt and pepper to taste
- 4 slices Brioche bread See notes.
- shredded mozzarella cheese See notes.
- shredded cheddar cheese See notes.
Instructions
- Heat a skillet on medium heat along with the butter.
- Once the butter is melted, add the lobster meat, Old Bay Seasoning, salt, and pepper to taste.
- Stir and cook for 3-4 minutes until the lobster is cooked. The color will change from translucent to opaque. Remove the lobster and set it aside.
- Adjust the heat on the skillet to medium-high. Spread the remaining 1 teaspoon of butter onto one side of two separate slices of bread (each slice will get 1/2 teaspoon) and place the bread slices butter side down in the skillet.
- Load the cooked lobster and shredded cheese onto both slices of bread. Top the bread with another slice of bread to create a sandwich.
- When the bottom of the bread has browned, flip the sandwiches and cook for a few minutes on the other side.
- Cool before serving.

This was so good!!! I used homemade sourdough bread, and it complimented the ingredients well. This was super comforting, rich, and delicious, and I'll for sure make it again!
