Lobster Grilled Cheese

This Lobster Grilled Cheese sandwich is made with gooey cheddar and mozzarella and topped with Old Bay seasoned seafood loaded into brioche bread. Enjoy restaurant quality right at home.

Ingredients
  

  • 8 oz raw lobster meat Claw, knuckle, or tail.
  • 2 teaspoons butter Divided.
  • 1/2 teaspoon Old Bay Seasoning
  • salt and pepper to taste
  • 4 slices Brioche bread See notes.
  • shredded mozzarella cheese See notes.
  • shredded cheddar cheese See notes.

Instructions
 

  • Heat a skillet on medium heat along with the butter.
  • Once the butter is melted, add the lobster meat, Old Bay Seasoning, salt, and pepper to taste.
  • Stir and cook for 3-4 minutes until the lobster is cooked. The color will change from translucent to opaque. Remove the lobster and set it aside.
  • Adjust the heat on the skillet to medium-high. Spread the remaining 1 teaspoon of butter onto one side of two separate slices of bread (each slice will get 1/2 teaspoon) and place the bread slices butter side down in the skillet.
  • Load the cooked lobster and shredded cheese onto both slices of bread. Top the bread with another slice of bread to create a sandwich.
  • When the bottom of the bread has browned, flip the sandwiches and cook for a few minutes on the other side.
  • Cool before serving.

Notes

The amount of cheese you use is a matter of preference. If you love cheese, load it up. Feel free to start with 1/4 cup of shredded cheese and add more to suit your taste and how cheesy you like your sandwich.
I recommend sliced brioche bread or Texas toast. Sourdough and French bread will also work well.
You can use precooked lobster. That will make this even easier!
