Creamy Shrimp Enchiladas

These Creamy Shrimp Enchiladas are crafted with a homemade spice blend & drizzled in a cheesy salsa verde sauce. 👉


– olive oil – raw shrimp – tomatoes & green chilies – tortillas  – monterey jack cheese  – foil *all ingredients listed below

Step 1

In a skillet, heat olive oil. Add shrimp & diced tomatoes with green chilies  & season with  spices.

Step 2

Take a tortilla & place a spoonful of the shrimp filling in the center.

Step 3

Roll it up & place it into a 9×13 baking dish. Repeat this process with the remaining tortillas & shrimp filling.

Step 4

Heat the skillet. Add butter & allow it to melt. Once melted, add flour & whisk.

Step 5

Add in sour cream, salsa verde, diced green chilies, grated cheese. Stir until thick to create a cream sauce.

Step 6

Pour the cream sauce over the enchiladas. Sprinkle the remaining grated cheese over the top. Cover & bake.
