These Creamy Shrimp Enchiladas are crafted with a homemade spice blend & drizzled in a cheesy salsa verde sauce.

INGREDIENTS

–  olive oil – raw shrimp  –  tomatoes & green chilies . –  tortillas I –  Monterey Jack Cheese or pepper jack cheese – foil *all ingredients below

 In a large skillet, heat olive oil. Add shrimp & diced tomatoes with green chilies to the skillet & season with the spices.

Take a tortilla & place a spoonful of the shrimp filling in the center.

Roll it up and place it into a 9×13 baking dish. Repeat this process with the remaining tortillas & shrimp filling.

Heat the skillet on medium heat. Add butter & allow it to melt. Once melted, add flour & whisk.

Add in sour cream, salsa verde, diced green chilies, & grated cheese. Stir until thick to create a cream sauce.

Pour the cream sauce over the enchiladas. Sprinkle the remaining grated cheese over the top.

Cover & bake.
