Place a saucepan on medium heat & add the sake & mirin.

Add in the miso paste & stir. Add in sugar or sweetener & stir.

Place the fish in a bowl. Pat it dry & add the marinade to the fish. Cover with wrap & place in the fridge. Marinate.

Preheat oven to 400 degrees. Place a skillet or grill pan on medium-high heat on the stove along with the butter.

When the butter has melted, add the marinated fish to the pan with the fish skin side up.

Sear for 2-3 mins until the fish turns brown. Flip the fish. Place the fish in the oven and bake for 6-9 mins.
